EASY DINNER TONIGHT!



CHICKEN STIR FRY
4 chicken breasts
3 Tbsp. Corn starch
2 Tbsp. Soy sauce
½ tsp. Ginger
¼ tsp. Garlic powder
3 Tbsp. Oil
2 C. broccoli
1 C. celery
1 C. carrots
1 small onion

(I use whatever veggies I have on hand)
1 C. water
1 tsp. Chicken bouillon (I use a different chicken flavoring I get from Costco -- it works too, w/ less sodium.)


Cut chicken into ½ in. strips; place in ziplock. Add cornstarch; toss to coat. Mix soy, ginger and garlic; add to chicken. Refrigerate 30 minutes. Cook chicken in 2 Tbsp. Oil till no longer pink. Remove chicken. Add 1 Tbsp. Oil and sautee veggies until crisp tender. Add water and bouillon. Return chicken to pan. Cook and stir until thickened and bubbly. Serve with rice.
